Health Starts in the Kitchen

I’m a huge believer that health starts in the kitchen. At a recent YPO Health & Wellness retreat, I discovered a fabulous soup recipe that I couldn’t wait to make at home, especially to recover after long weeks of travel.

This soup is a vibrant mix of roots, greens, and sea vegetables, simmered to perfection to draw out their incredible health benefits. Here’s how you can make this nourishing broth that stands on its own or as a base for hearty stews:

🍲 Ingredients:

3 quarts of water
1 large onion, chopped
2 carrots, sliced
1 stalk of burdock root, peeled and chopped
1 cup of daikon radish and tops, chopped
1 cup of winter squash, cut into large cubes
1 cup of mixed root vegetables (turnips, parsnips, rutabagas) for added sweetness
1 1/2 cups of chopped greens (kale, parsley, beet greens, chard, dandelion)
1 cup of seaweed (nori, wakame, or kelp), chopped
1/2 cup of cabbage, chopped
Sea salt, to taste

✅ Instructions:

Combine All Ingredients: Add all the vegetables and seaweed to the water in a large pot.
Simmer: Bring the mixture to a low boil, then reduce the heat and let it simmer for 40 minutes.
Strain and Serve: Strain the broth, pressing the vegetables to extract maximum flavor. Season with sea salt to taste.
Store: Any leftover broth can be cooled and stored in a tightly sealed glass container in the refrigerator for later use.

Since I’ve been home, making this soup has become a ritual, reminding me of the serene and supportive environment of the retreat. It’s more than just food; it’s a bowl of comfort that reconnects me with the experience and continues the journey of wellness at home.
